I agree with the specialisation thing maybe make them separate in the uni and to access some of them you need to complete the main uni courses that are available now. then make the ones that come after specialist degress
I think the education course are fine for now, however I think with the next expansion you should try "real world" ideas.
Make a "tree" branch system but in order to start the beggining of the branch you have to spend a certain amount of points (maybe make the first branch free) like 1000 points per start of each branch. Or disabled other branches if one branch is started.
I.E.
At least 25 or more courses each branch (so it can be more of a "committed" choice)
Medical - focused on medical items and healing, i.e reducing revive e costs, effectiveness of healing items, medical production better.
Military School - focused on weapons handling, damage effectiveness, battle stats
Veterinarian - Dog rarity accessibility can be raised, Dog houses can be raised, feed effectiveness can be raised, special dogs can be accessed, Maybe job effectiveness could be raised cause of dog help. Maybe allow dogs to getcritically sick and allow vets to be the only ones allowed to raise them again.
Coding - focused on hacking and stelaing money SECRETLY from people et al.
This is the same if not close to my other post about choosing, I actually would rather have it through education maybe. I think education should be specialized not general where everyone can do everything easily.
