Love this suggestion.
As far as excess he's correct the excess weed and coke will be sunk back into smuggling operations.
We DESPERATELY NEED more alcohol in the market right now it's becoming a MAJOR problem that smuggling alone will not solve.

Love the idea!
What about tweaking it to make it more accessible for newer players, to give them a sense of progression beyond just grinding Rep from day one?
Maybe update the Carlos' Construction NPC shop, making it possible for us to hire his crew, which allows us to upgrade each type of Production we currently have one time for every Production of that type that we own? For example if you own 4 Alcohol Stills, you could upgrade that Production 4 times, with each upgrade costing an increasing amount of cash & construction materials and taking an amount of waiting time for the upgrade to be applied, as with Submarine repairs and Property construction. Each upgrade would slightly boost the output/value/efficiency of that Production, and would slightly increase the amount of daily materials/staff required for it to operate at full efficiency?
Either way, I'm happy with anything that benefits new players in the short-term, old players in the long-term, and keeps both wanting to stay 😊

I've heard multiple times lately that alcohol prices have skyrocketed, and we need a boost in alcohol production, and I'd say let people work for it then.
The biggest concern I hear is that even the very top brass struggles to buy the top ranked alcohol, so I don't think it would be a problem to make people work hard to upgrade their output, thus my idea is to add prestiges to production and thus also extend the late-game gameplay.
Unlock prestiges
To unlock the prestiges, I imagine you would need to have bought all the workstations for the particular production, including the ones locked behind the business management education. (I think this is fair, since I consider this a very late-game mechanic)
You will accept that all your workstations for the production will be removed (so you have to buy them again, I'd suggest at the same price as normal), and you'll need double* the rep to unlock each new work station. (your rep will not be reset or removed in any way, you'll just need that much higher max rep to unlock all workstations).
*I'm thinking if looking at alcohol stills being unlockable per 80k rep normally, you'd need 160k at prestige 1, then 240k at prestige 2 and so on, but if it is deemed more fair I wouldn't mind a straight up doubling at each prestige.
Possible Upgrades
Production Boost - increases the amount produced by 20%
Efficiency - decreases the amount of supply needed by 10%
Premium Production - increases the rarity of what is produced by 20%
Not all of these necessarily works for all productions unless tweaked (premium production -> focused production, where you can chose which version you want to focus on producing either the normal or tainted version), and I don't think all of them needs to be an option. Which ever upgrade(s) would be chosen they should level up to level 5 just like for the jobs.
It could make sense to package efficiency and the boost, so that boost would also increase the required supply to increase by 20%, but if you upgrade both you'd end up needing the same amount of supply for double the production at 10* prestige (double the supply needed from production boost, but halved the amount of supply needed from efficiency)
What about the excess supply?
The new Cartel submarines can probably take care of most if not all increased supply of drugs and tainted drugs, especially if it's upgraded enough, but since I think all the productions should be prestigeable if any (with the potential exception of street crimes), the cheapest alcohols and all medical items could risk becoming near worthless.
While the easiest patch solution to this would be selling them in the town (you can already do this with medical items), I think it could be nice with another kind of outlet, where you could donate stuff like that for some kinda of global gains.
Thus I have also made this suggestion to be able to donate money and items for temporary global boosts
